Try our simple yet fabulous cheese quesadilla recipe. We served this one in our restaurant and was one of our most popular appetizers.
There is something delicious about a couple of flour tortillas filled with cheese (queso) and other goodies, grilled to perfection in butter, that makes this dish so satisfying. We even have a homemade flour tortilla recipe for you to try.
It get’s even better when you add sour cream and rich, creamy guacamole on the side for dipping. This is comfort food at it’s best!

This dish is so satisfying that you could call it dinner. Especially if you customize it. Quesadillas are so versatile you can literally put anything you can imagine inside of it.
I’ve seen people add:
- cooked salmon
- chopped tomato
- avacado slices
- mushroom slices
- cooked ground beef
…and the list goes on, only limited by your imagination. So start with my basic cheese quesadilla, which you are going to love, and go from there if you need some variety.

Don’t forget kids love quesadillas too. The recipe is easy enough that they can start cooking with your help.
Cheese Quesadilla Recipe (makes 1 quesadilla)
- 2 large flour tortillas
- 1 cup or more of shredded mild cheddar cheese
- 1 tablespoon yellow onion, finely chopped
- 1 mild green chile, canned, finely chopped
- 1 Tbsp. butter
Heat a flat non stick skillet over medium heat. Sprinkle the cheese,onion, green chile on a tortilla. Place the second tortilla on top.
Put a slice of butter into heated pan and spread it around while it melts. Then carefully put the quesadilla into the pan. Place more butter on the top tortilla. Cook until the cheese is melted and the bottom tortilla turns a golden brown. Turn the quesadilla over and cook until the cheese is completely melted.
Serve immediately on a plate and cut into wedges. For the finishing touches, garnish with sour cream and homemade guacamole.
