Mexican Wedding Cakes (Cookies)

This is my recipe for Mexican Wedding Cakes/Cookies. I make these every year at Christmas and they are always a hit.

I’ve tried other people’s recipes, but so far I’ve found that this one is the best. I think I make the balls a bit bigger so I’m not sure if I actually get 3 dozen, but I have also never counted!

I love these. Give them a try!
Ingredients:
½ cup butter, at room temp
¼ cup powdered sugar
1 tsp. vanilla
1 cup all-purpose flour
1/8 tsp. salt
1 cup finely chopped walnuts
Powdered sugar for rolling
Directions:
Beat butter and sugar together until creamy. Mix in vanilla. Add flour and salt. Beat until smooth. Stir in nuts. Shape into ½ inch balls. Place on ungreased baking sheet.

Bake in a 350F oven for 15 minutes, or until lightly browned. Remove from oven and quickly roll the hot cookies in powdered sugar. Let cool and roll again in sugar. Makes about 3 dozen.
