I’ve been experimenting with different recipes and believe I have come up with a pretty tasty one here.

My kids love this recipe, and they are pretty picky, so I figure I’ve got a winner. My goal was to come up with a cornbread recipe that’s not too heavy but still dense and flavorful.

I hope you like it.

Recipe For Cornbread

  • 3/4 cup yellow corn meal
  • 1 1/4 cup white flour
  • 3 tsp. Rumford baking powder (read the benefits of Rumford baking powder and why I use it.)
  • 1 tsp. sea salt
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 3/4 cup skim milk
  • 1 egg beaten
  • 1 cup cream style corn, liquified in a blender

In a large bowl combine the corn meal, flour, baking powder, salt, and sugar. Mix the dry ingredients well with a spoon.

Beat the egg in a bowl and add the liquified corn, milk, and melted butter.

Pour the egg mixture into the flour mixture and mix till the flour is just moistened. Do not over mix. Pour into a greased 8 inch square glass dish and spread evenly. You can use Pam to grease the pan. It works great.

Bake at *375 F for 25 -30 minutes.

Try this cornbread right out of the oven with some warm butter. The texture is nice and moist and not too heavy. I added the cream syle corn to add a little more corn flavor. I’m betting your family will love it.
