Here is a carne asada recipe sent in to me by a fan on my site. Looks good!

Ingredients:

1 teaspoon New Mexico Chili Powder
1 teaspoon ground Oregano
1 teaspoon Ground Cumin Seed
1 tablespoon dried minced onion
1/2 teaspoon white pepper
1/2 teaspoon salt
1-2 tablespoons extra virgin olive oil

1-2 pounds thinly sliced (1/4 inch)Top Loin
(I ask for this from the butcher’s block as it is usually not found sliced thinly enough prepackaged)

Directions:

Line a rimmed baking sheet with foil and pour olive oil evenly over sheet. Set oven to broil and place the rack at least 6 – 8 inches from the broil heating element.

Mix together spices and salt in small bowel.

Rinse meat and pat dry with paper towels.

Toss meat lightly on baking sheet so it is lightly coated with the olive oil. Now arrange the meat flat on sheet.

Sprinkle meat with seasoning and rub in slightly. Flip meat over and re-arrange flat and season and rub the top of the meat with the remaining seasoning.

Place baking sheet in oven to broil for 5-8 minutes. Pull sheet out and flip meat over and return to oven to broil another 3-5 minutes.

Slice the meat into strips and and serve with grilled onions, fresh guacamole and hot tortillas!

Enjoy!
