I have experimented for some time for a good taco meat recipe and this one fits the bill.

Here is the taco meat recipe that I came up with and it’s not greasy.

I use it for everything: tacos, enchiladas, taco salad, quesadillas and even nachos if I want to be lazy.

Ingredients:

  • 1 ½ lbs. of ground sirloin
  • 1 medium white onion, finely chopped
  • 2 cloves of minced garlic
  • 1 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 2 Tbsp. fresh cilantro, chopped (the key ingredient)
  • 2 green chiles, canned, chopped (which tend to make it a bit wet but really adds to the flavor
  • garlic salt to taste

Directions:

Brown the meat and onion in a frying pan over medium heat. Add the garlic the last two minutes of cooking.

Drain the grease.

Add the chili powder, cumin, and chiles and stir well.

Season with garlic salt to taste.

After draining the meat and adding the spices, it makes for a great recipe without having to use a slotted spoon. No grease.
