Crazy Johnny's Drunk Fajita Marinade

How I Came Up With Crazy Johnny's Drunk Fajita Marinade:

I was having a get together at my house for all of my friends. I had a little too much to drink ( read intoxicated) and started adding all kinds of ingredients to my fajitas.

The result was my friends loved my fajitas so much that I had to write down the recipe so I could make it again.

So here is the recipe.

  • 1 1/2 lbs. flank steak

  • 1 bottle of Corona beer

  • 1/3 cup fresh squeezed lemons

  • 2 tablespoons of Crazy Johnny's drunk seasoning, see recipe below.

  • 1 orange, juiced

  • 3 cloves of garlic minced

  • 1/3 cup olive oil

  • 1/4 Cup fresh cilantro chopped roughly

  • 2 tsp. salt

  • 2 tsp. pepper

1. Take a plastic ziploc bag and add the first 8 ingredients marinade for 4 to 24 hour.

2. Preheat grill for high heat.

3. Remove from marinade and season each fajita with salt and pepper into both sides, let stand for 15 minutes.

4. Place the fajitas on the preheated grill, and immediately turn after 30 seconds.
(this first turn is to ensure that one side is seared).

Cook 3 to 7 minutes per side, to desired doneness.

Crazy Johnny's Drunk Fajita Seasoning

  • 1/2 tablespoon chile powder

  • 1/2 tablespoon ground cumin

  • 2 1/2 tablespoons paprika

  • 1 tablespoon black pepper

  • 1/2 tablespoon crushed red pepper

  • 1/2 tablespoon cayenne pepper

  • 2 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 2 tablespoon salt

  • 1 tablespoon dried oregano

  • 1/2 tablespoon parsley

  • 1/4 tablespoon ground coriander

  • Combine all ingredients thoroughly.

I had actually given up on making Spanish rice! No one, or no recipe, until YOURS, ever said to actually BROWN the rice so much.! I think thats the taste difference!

Where good Mexican food is hard to find.
