Crazy Johnny’s Drunk Fajita Marinade

This fajita marinade was sent in to me by a reader and I want to share it with you.  It’s quite good.

How I Came Up With Crazy Johnny’s Drunk Fajita Marinade by Johnny Hinojosa League City Tx. USA

I was having a get together at my house for all of my friends. I had a little too much to drink (read intoxicated) and started adding all kinds of ingredients to my fajitas.

The result was my friends loved my fajitas so much that I had to write down the recipe so I could make it again.

So here is the recipe.

Ingredients:

  • 1 1/2 lbs. flank steak
  • 1 bottle of Corona beer
  • 1/3 cup fresh squeezed lemons
  • 2 tablespoons of Crazy Johnny’s drunk seasoning, see recipe below.
  • 1 orange, juiced
  • 3 cloves of garlic minced
  • 1/3 cup olive oil
  • 1/4 Cup fresh cilantro chopped roughly
  • 2 tsp. salt
  • 2 tsp. pepper

Directions:

1. Take a plastic ziploc bag and add the first 8 ingredients marinade for 4 to 24 hour.
2. Preheat grill to high heat.
3. Remove steak from marinade and season each fajita with salt and pepper on both sides, let stand for 15 minutes.
4. Place the fajitas on the preheated grill, and immediately turn after 30 seconds.
(this first turn is to ensure that one side is seared).

Cook 3 to 7 minutes per side, to desired doneness.
Crazy Johnny’s Drunk Fajita Seasoning

Ingredients:

  • 1/2 tablespoon chile powder
  • 1/2 tablespoon ground cumin
  • 2 1/2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1/2 tablespoon crushed red pepper
  • 1/2 tablespoon cayenne pepper
  • 2 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoon salt
  • 1 tablespoon dried oregano
  • 1/2 tablespoon parsley
  • 1/4 tablespoon ground coriander

Combine all ingredients thoroughly.
