Mexican Fruit Salad

Alejandra Morales-Andrade, a reader of mine, sent in this recipe called Esperanza’s Favorite Fruit Salad.

Ingredients:

  • juice from 2 whole limes
  • 2 to 3 cups honeydew melon, cut into chunks
  • 1 cup flaked coconut
  • lots of whipped cream
  • 2 cups or more purple grapes

Directions:

Mix all the ingredients in a bowl and refrigerate for about fifteen minutes and enjoy!!

Another Mexican Fruit Salad Recipe

You can also use any combination of cut up fruits like strawberry’s, watermelon, grapes, pineapple, oranges, bananas you name it. Squeeze a bit of lime juice all over and a teaspoon of sugar if needed.

Now for a real refreshing twist, sprinkle some Gebhardt chile powder over the fruit and stir. The flavor is great.

We will be having this as part of our traditional dinner on Christmas eve. Did I mention we were having Chicken enchiladas, homemade chile rellenos, refried beans and spanish rice? I can’t wait.
